Back to life, and back to menu planning. I haven't been great at menu planning or keeping my life organized lately. It's expensive not to, and I don't eat as healthy and I put on weight. Yuck. Anyway, here is my plan for our sad week.
Monday: Paleo Fish Tacos
Tuesday: Funeral Viewing (out)
Wednesday: Funeral (out)
Thursday: Primal Fried Shrimp and raw carrots (meal on the go)
Friday: Primal Pizza
Saturday: Caribbean Seafood Stew
Sunday: Grilled Chicken and grilled veggies

Menu Plan Monday - All primal
I'm grumpy...and I'm going to admit something. I hate sitting down planning menus. I truly enjoy eating from said menus. We eat better, and stay within our budget when I plan out menus. I know some people sell menu plans...I sincerely wish I had the extra money laying around to buy one. Also, we have a leg of lamb we got at the end of last summer that's been sitting in our freezer. It's been in there long enough, maybe too long. It must be eaten before it gets any more burned. Anyway...here I go with this week's menu plan.
Monday: Leftover Cookout stuff
Tuesday: Paleo Kung Pao Chicken (can you believe it?!)
Wednesday: Fire Roasted Paleo Chili
Thursday: leftovers
Friday: Pankoconut Fish Sticks with sweet potato fries.
Saturday: Going to a cook out!
Sunday: Roasted Leg of Lamb
A recipe I'd like to try out this week: Breakfast cookies!
One recipe we tried last week that was awesome was this seasoning recipe for tacos.

Menu Plan Monday -- All Primal
I'm back to it again. After being in a weird stasis while moving, we are now detoxing with healthy primal/paleo foods. We are going strict again to lose the 5 or so pounds we gained while being stressed about moving and drinking too many Angry Orchard ciders. Here's what we're eating this week.
Monday: Chimichurri Meatballs with a big salad
Tuesday: Chicken Satay with grilled veggies
Wednesday: Fish Tacos
Thursday: Leftovers
Friday: Grilled Sausage and Garlicky Summer Squash Fritters
Saturday: Grilled Chicken Legs and Avocado Kale Salad
Sunday: Roast Beast!
Here's our shopping list, and since we just moved it's huge. Most of this we don't have in the house.
2 pounds of ground beef
2 pounds of chicken tender/strips
1 pound of fish (light fish, tilapia or whatever is on sale)
1 package of sausage
3 pounds of chicken legs
small ginger root
1 onion
3 avocados
fresh cilantro
2 summer squashes
bunch of kale
2 tomatoes
Bag of carrots
Package of mushrooms
Lime juice

Menu Plan Monday -- All Primal
We're having to be super tight. It's the end of the month and the bottom of the budget. Luckily for us last week meat was on a super sale, so this week all we had to purchase was veggies and dairy. Two nights of Mexican flavored stuff to stretch what we have, and easy recipes for busy days.
Monday: Chicken Tacos
Tuesday: Thai Chicken Salad
Wednesday: Taco Night
Thursday: Beef bacon onion bites
Friday: Primal Chicken nuggets with sweet potato fries
Saturday: Chicken Stew
Sunday: Easter Sunday with parents :)

Menu Plan - All Primal
Looking around the internet for primal/paleo recipes that fit our budget is tough. I've seen posts about people saying their budget friendly recipes add up to $30 for the meal. Sorry, that's still too high for our budget. Now granted not all dinners are created equal, but we have to push it. Monday's dinner, rounds up to $7 for a family of four, taco night ends up costing us around $15. The most expensive dinner we'll probably have this week is the smokey roast, and that might end up being around $20 for everything.
I'm venting...it's still super tight around here. Anyway, here's our week's worth of food, all for under $125.
Monday: Sweet Italian sausage and baby carrots
Tuesday: Slow cooker Smokey Roast
Wednesday: Taco Night
Thursday: Spaghetti with spaghetti squash
Friday: Bacon wrapped chicken bites

Menu Plan -- All Primal
Last week our favorite recipe was the Bolognese with spaghetti squash. We loved it so much we're making it again this week, might as well since we already have all the ingredients right? I haven't checked in with the scale, but I'm sure I will at some point this week.
Anyway, here's the plan. Have a great week!
Monday: Bratwurst with side salad
Tuesday: Sage Stew with Pumpkin -- crockpot
Wednesday: Roasted chicken (I keep putting this off, it's been two weeks now I was supposed to roast this bird!)
Thursday: Bolognese with Spaghetti Squash
Friday: Indian Butter Chicken
Saturday: Grilled Chicken Quarters with side salad
Sunday: Leftovers

Menu Plan -- All Primal
Chicken was on sale this week at the grocery store. We got another roaster for five bucks! That's dinner on Friday. Trying to mix up what we eat each week, pork and chicken seem to be the cheapest forms of eating. Discussed going fishing with the hubs this coming spring, but that's not going to help us out right now. It's twenty degrees outside. I can't think I'd enjoy fishing very much when it's that cold.
Anyway, for now...here's our primal menu for the week. Primal on a budget for less than $125 bucks a week!
Monday: Paleo Spaghetti - with spaghetti squash
Tuesday: Primal Chicken Parm (with cheese!)
Wednesday: Portobello Turkey Burger with sweet potato fries.
Thursday: Pork Chops with spaghetti squash
Friday: Rosemary Apple Chicken
Saturday: Chive Butter Roasted Chicken
Sunday: Leftovers

Menu Plan
Our menu plan always comes with a bit of challenges. We're on a strict budget of $125 a week, and we're a family of four who eats primally. Because of our strict budget, our meats are not organic right now, however our veggies and diary products are. We make our menu on Sunday morning and hit the grocery stores before the church crowds let out, and post it up for Organizing Junkie's Menu Plan Monday.
Variety is the name of the game right now. We don't want to get tired of the same old stuff around the house, however it's smart to stock up on stuff when it's on sale. Last week hubs nabbed boneless split chicken breasts for .99 cents a pound. Holy cow!! Anyway, enjoy the menu. We're looking forward to pizza on Friday! Might have a beer with it if money allows. :)
Monday: Bratwurst and cabbage (teaching night, must be fast!)
Tuesday: Moroccan Chicken Casserole
Wednesday: Taco Night!
Thursday: Primal Shake and Bake
Friday: Primal PIZZA!!!
Saturday: Pork Loin
Sunday: Leftovers
And since I'm writing this on a Sunday night, we have improvised tonight's dinner. I have to share this with you. Braised Venison/Lamb Shanks and yes, we're using both meats because it's what we have in the freezer. Off a bit from last weeks menu plan, but variety must be had! Have a great week everyone!

Menu Plan Monday
After a troubling fall, I'm slowly returning to myself. I've been missing this blog and the regularity it brought to my life. The menu plans, the bettering of myself.... Being a solo parent has taken so much adjustment. Homeschooling as a solo parent took even more adjusting. We're getting there. I'll be talking more about our progress soon.
Today I'm talking about menu planning, because it's so good for your wallet and your kids. I'm not much of a planner, but I noticed when I took my hiatus from blogging the cost of feeding my family went up. I believe it's because I had stopped giving our menus so much thought. So onward to a new year, hopefully I will remember myself, and what this blog has meant to me over the years. Here's my menu plan. :)
For Christmas yesterday, I roasted a turkey. Some of our initial dinners will be leftovers based on that. :)
Monday: Turkey Pot Pie I'll be doing my own version of this based off this recipe. If it turns out lovely, I will post about what I have done.
Tuesday: Turkey Tetrazzini Something about this just sounds weird, but the picture they provided looks divine, so I'll be giving this a try.
Wednesday: Turkey Stew
Thursday: Leftover Buffet
Friday: Homemade Pizza
Saturday: Company over...possibly eat out.
Sunday: New Year's Eve...will have to plan yummies!

Menu Plan Monday
This week, I'm getting ready to go to Virginia. My parents graciously bought me plane tickets home for the kids and I, and they are even flying me to California to visit my husband. I have the best parents ever.
Foodwise, I'm trying to use what we have in the house so there isn't any rotting food in the house when I get back. So here's to using what you've got. :)
Monday: Speghetti and hot sausage meatballs.
Tuesday: Leftover Chicken and roasted mushrooms.
Wednesday: Beans and Rice
Thursday: Sandwhiches
Friday: Airplane food...yuck.
Have a great week everyone.

Menu Plan Monday
This passed week has been very strange. It's been busy, it's been emotional..just wow. Really. I think that I've been living under the misconception that I'm actually in control of my life. Sure, I make some decisions and I try to keep drama out, but..wow. Just wow. So, this week's menu plan will also be combined with a to-do list. Because no matter what happens..there are things that have to be done anyway.
This week, my goal is to apply as a teacher to every county that's local to my home. Getting a teaching job is going to be so incredibly difficult with how each county has had to lay off so many teachers. I won't be surprised if I don't get a job...but I definitely won't if I don't try. I also hope to put some time away to update my daughters dresser. Its old, cheap and ugly. However, this green momma has some leftover paint, and got some new drawer pullies from the local craft store. Hopefully this will end up being a cute little project for her. I'm also hoping to make some jelly...I've had the ingredients staring at me for weeks. We are out of jelly...must make jelly.
So..anyway, here's my menu plan for the week.
Monday: Five minute Gourmet Alfredo
Tuesday: Mini burgers and fries
Wednesday: Burger Mac with any left overs from yesterday.
Thursday: Quick Pizza (I'll be at work, friend is cooking for the kids) <3
Friday: Out to celebrate!
Saturday: Also out, playing a gig...
Sunday: Rosemary Chicken
Have a great week everyone!

Menu Plan Monday
My mom is in town this week, and I haven't been cooking very much. She loves to go out, and she loves to spoil us by taking us out for dinners. I've had lots of stuff going on in my personal life lately, if you're curious I encourage you to click the blue botton on the right to my more personal blog. Anyway, I have some things to throw together for quick meals if need be, this is very much a convenience food type of week. Here's some fall back plans for dinner if we decide to stay in.
1. I bought a few simmer sauces from Seeds of change Specifically their Korma is my absolute favorite. Make some rice, cook some chicken and simmer for a few minutes in a sauce pan and I have a very easy dinner. It's not the cheapest, the bottle costs about 4-5 dollars at the store, depending if it's on sale or not. But it's good, oh so good, and the kids like it too.
2. I still have a few jars of last summer's tomatoes in the cupboard, so it's likely that spaghetti may end up on the menu if necessary this week. I always have garlic on hand, so home made garlic bread could also be a fall back option. Throw some mushrooms and onions in those tomatoes along with oregano and a dash of red pepper seeds, and YUM. Love love love...
3. I still have some sausage leftover from the sampling of Applegate Farms I received a while back. So throwing together breakfast might be an option too.

Menu Plan Monday
The rollercoaster continues this week. I should find out today if I got a job that I'm really putting a lot of energy into getting. I would be good at that job, it uses my degree and it's the first one out there that I felt like I could get that does use my education. Keep your fingers crossed. I should know today. Anyway, here's the menu for the week. Have a great week everyone.

Tuesday: Slow Cooker Meatballs and butter noodles
Wednesday: Spaghetti and Meatballs
Thursday: Kids eating with their dad
Friday: Homemade Pizza

Menu Plan Monday
So, I took a two week hiatus. Life decided to throw me through another emotional loop, and I needed some time to recover from it. I holed myself up, and just tried to heal through these few weeks. I know I'm being cryptic. It's pretty personal, so I'm just going to leave it at that. I have more healing to do, but I'm a strong tough chick and I'm getting there.
Here's the menu plan for the week:
Monday: Breakfast
Tuesday: Slow Cooker Meatball Soup
Wednesday: Spanish Tortillas
Thursday: Tacos!
Friday: Home made Pepperoni Pizza
Have a great week everyone.

Menu Plan Monday
So, I skipped the plan last Monday, and I regret it. I need that small amount of organization to make dinner one less hassle throughout the week. I also applied for a new job last week, so positive thoughts and prayers are welcome. It's not a new thing for me to apply for a job, and in this market it's not unusual to not even get a call back. This job though, is perfection. So, I'm hoping somehow I can land it. Oh, and my newest giveaway ends this week, so if you haven't had a chance to look, you should. Those bags are awesome.
Anyway, here is my plan for the week:
Monday: Spaghetti and Homemade Garlic Bread
Tuesday: Barbeque Chicken and Rice
Wednesday: Chicken Noodle Soup (leftover chicken!)
Thursday: Slow Cooker Butter Noodles and Meatballs
Friday: Pizza night!

Even though it's not frightful outside right now, I'm craving warm comfort foods. I'm loving my first Colorado winter so far, we've had a couple snowfalls, nothing to terrible here yet.
Have a great week everyone. :)
Monday: Party leftovers, Chicken Nuggets with Mac n' Cheese
Tuesday: Shepherd's Pie
Wednesday: Pot Roast
Thursday: (Vegan) Broccoli and Pasta
Friday: (vegetarian) Corn and Potato Chowder and home made bread for dipping!
I can't wait to curl up on the couch in front of the fireplace and watch movies with the kiddos on Friday with that yummy chowder. I love winter. :)
