Menu Plan Monday

Back to life, and back to menu planning.  I haven't been great at menu planning or keeping my life organized lately. It's expensive not to, and I don't eat as healthy and I put on weight.  Yuck. Anyway, here is my plan for our sad week.



Monday: Paleo Fish Tacos
Tuesday: Funeral Viewing (out)
Wednesday: Funeral (out)
Thursday: Primal Fried Shrimp and raw carrots (meal on the go)
Friday: Primal Pizza
Saturday: Caribbean Seafood Stew
Sunday: Grilled Chicken and grilled veggies

Menu Plan Monday - All primal

I'm grumpy...and I'm going to admit something.  I hate sitting down planning menus.  I truly enjoy eating from said menus.  We eat better, and stay within our budget when I plan out menus. I know some people sell menu plans...I sincerely wish I had the extra money laying around to buy one.  Also, we have a leg of lamb we got at the end of last summer that's been sitting in our freezer.  It's been in there long enough, maybe too long.  It must be eaten before it gets any more burned. Anyway...here I go with this week's menu plan.

Monday: Leftover Cookout stuff
Tuesday: Paleo Kung Pao Chicken (can you believe it?!)
Wednesday: Fire Roasted Paleo Chili
Thursday: leftovers
Friday: Pankoconut Fish Sticks with sweet potato fries.
Saturday: Going to a cook out!
Sunday: Roasted Leg of Lamb


A recipe I'd like to try out this week: Breakfast cookies!
One recipe we tried last week that was awesome was this seasoning recipe for tacos.

Menu Plan Monday -- All Primal

I'm back to it again.  After being in a weird stasis while moving, we are now detoxing with healthy primal/paleo foods.  We are going strict again to lose the 5 or so pounds we gained while being stressed about moving and drinking too many Angry Orchard ciders.  Here's what we're eating this week.


Monday: Chimichurri Meatballs with a big salad
Tuesday: Chicken Satay with grilled veggies
Wednesday: Fish Tacos
Thursday: Leftovers
Friday: Grilled Sausage and Garlicky Summer Squash Fritters
Saturday: Grilled Chicken Legs and Avocado Kale Salad
Sunday: Roast Beast!

Here's our shopping list, and since we just moved it's huge.  Most of this we don't have in the house.

2 pounds of ground beef
2 pounds of chicken tender/strips
1 pound of fish (light fish, tilapia or whatever is on sale)
1 package of sausage
3 pounds of chicken legs

small ginger root
1 onion
3 avocados
fresh cilantro
2 summer squashes
bunch of kale
2 tomatoes
Bag of carrots
Package of mushrooms

Lime juice

Menu Plan Monday

What a week last week was.  I didn't even get any of my posts in.  Chicken death, acquiring new chickens..house hunting, taking the kids to the aquarium.  It was an insane week last week.  Hopefully this week settles down, and I can get stuff done.  I doubt it, but one can hope.  Right?

Anyway, enough of that here's what we're eating this week.  I am so glad we do these menu plans...because when life is insane, it's nice to not have to worry about dinner.  Right?


Monday: Spring Slaw with Smoked Shrimp
Tuesday: Caribbean Seafood Stew
Wednesday: Spinach and Feta Stuffed Chicken
Thursday: Crispy Chicken Wings
Friday: Leftovers
Saturday: My birthday, busy day
Sunday: Hubby's birthday, out for maryland crabs!

Things I'd like to make if I have time:


  • Strawberry Honey Lime Spritzer
  • Grain Free Granola Bars
  • Honey Biscuits



  • Shopping List: Totaled to just about $100
    Chicken thighs/breast
    spinach

    2lb bag of shrimp

    1lb of white fish (what's on sale, think haddock, cod, halibut)

    Menu Plan Monday -- All Primal

    We're having to be super tight.  It's the end of the month and the bottom of the budget.  Luckily for us last week meat was on a super sale, so this week all we had to purchase was veggies and dairy.  Two nights of Mexican flavored stuff to stretch what we have, and easy recipes for busy days.

    Monday: Chicken Tacos
    Tuesday: Thai Chicken Salad
    Wednesday: Taco Night
    Thursday: Beef bacon onion bites
    Friday: Primal Chicken nuggets with sweet potato fries
    Saturday: Chicken Stew
    Sunday: Easter Sunday with parents :)

    Menu Plan - All Primal

    Looking around the internet for primal/paleo recipes that fit our budget is tough.  I've seen posts about people saying their budget friendly recipes add up to $30 for the meal.  Sorry, that's still too high for our budget.  Now granted not all dinners are created equal, but we have to push it.  Monday's dinner, rounds up to $7 for a family of four, taco night ends up costing us around $15.  The most expensive dinner we'll probably have this week is the smokey roast, and that might end up being around $20 for everything.

    I'm venting...it's still super tight around here.  Anyway, here's our week's worth of food, all for under $125.


    Monday: Sweet Italian sausage and baby carrots
    Tuesday: Slow cooker Smokey Roast
    Wednesday: Taco Night
    Thursday: Spaghetti with spaghetti squash
    Friday: Bacon wrapped chicken bites

    Menu Plan -- All Primal

    Chicken was on sale this week at the grocery store.  We got another roaster for five bucks!  That's dinner on Friday.  Trying to mix up what we eat each week, pork and chicken seem to be the cheapest forms of eating.  Discussed going fishing with the hubs this coming spring, but that's not going to help us out right now.  It's twenty degrees outside.  I can't think I'd enjoy fishing very much when it's that cold.

    Anyway, for now...here's our primal menu for the week.  Primal on a budget for less than $125 bucks a week!


    Monday: Paleo Spaghetti - with spaghetti squash
    Tuesday: Primal Chicken Parm (with cheese!)
    Wednesday: Portobello Turkey Burger with sweet potato fries.
    Thursday: Pork Chops with spaghetti squash
    Friday: Rosemary Apple Chicken
    Saturday: Chive Butter Roasted Chicken
    Sunday: Leftovers

    Menu Plan Monday

    This is week three for me and my primal diet, week 2 of my full on no cheating diet.  So far, I've lost about 4 pounds, this was on top of the previous 20 that I lost last year.  I'm pretty proud of this grand total, but sadly, I'm not done loosing.

    This week, I've been very tired of cooking.  I have to make meals that I like and that will keep so I can just have kitchen free days.  There is a TON of cooking involved it seems, and there isn't any convenience food for me to go to. There's no primal microwave meals at the grocery store..ha!!

    Anyway, here's a plan for this week and a few yummy treats thrown in.

    Monday: Broiled Salmon with Terragon, Lemon, and butter
    Tuesday: Tuna Salad
    Wednesday: My best friend's Chili Recipe
    Thursday: Leftover Chili!  Yes...no cooking.
    Friday: Enchiladas
    Saturday: Potluck, and I'm supposed to bring bread?! How's this instead?
    Sunday:  I'm eating out...I'm tired of cooking!

    Treats: Primal Almond Butter Pumpkin Brownies

    Menu Plan Monday


    After a troubling fall, I'm slowly returning to myself. I've been missing this blog and the regularity it brought to my life. The menu plans, the bettering of myself.... Being a solo parent has taken so much adjustment. Homeschooling as a solo parent took even more adjusting. We're getting there. I'll be talking more about our progress soon.

    Today I'm talking about menu planning, because it's so good for your wallet and your kids. I'm not much of a planner, but I noticed when I took my hiatus from blogging the cost of feeding my family went up. I believe it's because I had stopped giving our menus so much thought. So onward to a new year, hopefully I will remember myself, and what this blog has meant to me over the years. Here's my menu plan. :)

    For Christmas yesterday, I roasted a turkey. Some of our initial dinners will be leftovers based on that. :)

    Monday: Turkey Pot Pie I'll be doing my own version of this based off this recipe. If it turns out lovely, I will post about what I have done.
    Tuesday: Turkey Tetrazzini Something about this just sounds weird, but the picture they provided looks divine, so I'll be giving this a try.
    Wednesday: Turkey Stew
    Thursday: Leftover Buffet
    Friday: Homemade Pizza
    Saturday: Company over...possibly eat out.
    Sunday: New Year's Eve...will have to plan yummies!

    Menu Plan Monday


    I haven't done a Menu Plan is so very long.  I love getting back into the swing of blogging.

    Anyway, here's my week:

    Monday:
    Lunch: Leftovers
    Dinner: Breakfast

    Tuesday:
    Lunch: Butternut Squash Soup with Parmesan Crips (from Anni Daulter's new book, the Organic Family Cookbook).
    Dinner: Spaghetti and Italian Sausage with Salads.

    Wednesday:
    Lunch: Super Crunch Apple Cranberry Tuna Wrap
    Dinner: Slow Cooked Curried Chicken with Cauliflower

    Thursday:
    Lunch: Leftovers
    Dinner: Sandwiches, and leftovers

    Friday:
    Lunch: Ham n Cheese Panini with fresh grapes (Another Anni Daulter recipe!)
    Dinner: Homemade Pizza

    Saturday:
    Lunch: Leftovers
    Dinner: Chicken legs and corn on the cob

    Sunday:
    Lunch: Chicken Sandwiches (from yesterdays leftovers)
    Dinner: Roasted Chicken

    Cheap Eats

    I did the budget this morning. It was...depressing. We are $3000 short this month. Yes, you read that right...three grand. My husband has a good job, we live in a modest house. The problem is, he lives in a studio apartment in another state to do his good job. He supports two households, and even his respectable paycheck can't manage. My freelancing doesn't pull in the money to cover the rest. I can only hope that insurance companies and rent checks pull through. What a complicated mess...

    If we stayed within budget, our budget allows for only $600 for food, gas and any other extras. Super tight...and it seems impossible. So, enough wallowing in my own misery. Here's my cheap eats for the week. I've been in tight situations before so let's see how I can stretch the buck this week.


    Monday: Cheesy Potatoes with leftover sausage.
    Tuesday: Rice and Bean Tortillas with home made salsa.
    Wednesday: Baked Chicken and Macaroni Salad
    Thursday: Leftover (beans, rice, and chicken tortillas with guac)
    Friday: Homemade Pizza
    Saturday: Potluck Party
    Sunday: Leftovers

    With what I have in the house, I should be able to feed my family this week for under $50. Scary times.
